7. Winter Sausage and Lentil Salad

  • 1 link pre-cooked chicken sausage (3 oz)
  • 1 tsp garlic salt
  • 1/2 cup cooked lentils
  • 1/2 bulb fennel, finely diced
  • 1/2 Granny Smith apple, finely diced
  • 1/2 stalk celery, finely diced
  • 2 cups arugula
  • 1 tsp olive oil
  • 1 tsp red wine vinegar
  • 1/2 tsp Dijon mustard

Warm the chicken sausages. Season it with garlic salt and add lentils into it for 2 minutes. Remove the pan from heat, add fennel and stir it. Now add apple, celery and arugula. Now in another bowl whisk oil, mustard and vinegar and drizzle over top. It is full of nutritious meal containing just 390 calories.

  • 1/4 cup dry farro
  • 1 1/2 tsp olive oil
  • 1 Tbsp filtered apple cider vinegar
  • 1 tsp agave nectar
  • 1 tsp orange zest
  • 1/2 cup sliced kale
  • 1/2 cup chickpeas
  • 1/2 blood orange,

Take a bowl and whisk olive oil, vinegar, orange zest and agave nectar. Cook farro according to the instructions given on the package. Take a pan and toss farro with chickpeas, kale and blood orange. Remove the pan from heat and add dressing of olive oil, vinegar, orange zest and agave nectar. This recipe contains 420 calories.
